Is it possible just to renew the grout between the tiles? Can I seal the tiles themselves to prevent effects of weather, sea air etc?

Michael Gough at Tile Choice says: “On a roof terrace, there tends to be a lot of movement, so it will depend if the grouting is flexible enough to take this into consideration. I would personally use brush-in powdered grout designed for outdoor areas as this is more flexible.”
As for sealing outdoor tiles, you can do this to protect them from the weather and general wear and tear, and it’s particularly useful for those made from more porous, absorbent materials such as sandstone, terracotta etc. Different sealers protect different types of tile and grout, so it’s important to know the material your tiles are made from and its qualities when choosing the appropriate sealer.

Georgina, thank you so much for sourcing Michael Gough for me – could you please ask him if I need to remove ALL the current grouting between the tiles, or just use the powdered grout to fill the gaps/worn places? If I do need to remove the old grout, what is the best way/tool to use to avoid damaging the tile edge?
Delighted to hear that sealing is perfectly feasible, so will look into a suitable product
